This research consisted in a feasibility study to examine the use of HS-SPME/GC in combination with pattern recognition techniques as a simple,fast and reliable classification methodology to objectively discriminate between different vinegar types on the basis of their volatile distinctive profiles.The application of the stepwise LDA method on the volatile compounds data set characterized by SPME-GC resulted in predictive abilities of 100% as evaluated by the cross-validation procedure for both classification problems analysed,using only a reduced number of experimental chromatographic peaks as input variables.The use of a variable selection technique such as SLDA (based on Wilks’ Lambda criterion) allowed us to build optimal classification models using fourteen and three significant predictor variables as discriminant features in the four- and two-class approaches,respectively.Final identification by GC–MS of the volatile compounds responsible for the successful differentiation of the vinegar samples enabled us to interpret the results obtained.However,although these first results are fairly encouraging,we must point out that the actual applicability of HS-SPME/GC to the problem of vinegar authentication requires further research,examining a broader variety of vinegar qualities and origins.
